Easy Vegetable Beef Soup
I LOVE during the fall and winter months to make soup. I have TRIED so many different ways to make Vegetable Beef Soup and came up with this recipe from trial and error :)
Below is the grocery list for this soup and the directions on how I make it :) I hope so MUCH that you, your family and friends will enjoy it!!!!

Grocery List:
2 cans of corn
2 cans of diced potatoes
2 cans green beans
2 cans of brunswick stew – I use Mrs. Fearnow canned brunswick stew
1 to 2 cans of Campbell’s tomato soup
1 pot roast – if they are not on sale when I make this I buy a couple of thin sliced sirloin steaks
(I also buy Jiffy Cornbread to make to serve with this)

I have a big crock pot – if you have a smaller one you may want to cut the recipe down some. I like to cook a big batch so I can freeze some :)

Once you have all your ingredients you take just the pot roast or steak and put it in your crock-pot – you pour water over the meat and let it cook. I usually let mine cook on low setting for 8 to 10 hours. I check it and add more water when needed while it is cooking. Once the roast is done I like to skim the top of the broth and then I take out the meat and cut it up. I keep enough of the broth to fill about 1/3 of the way up in my crock pot (I put the additional broth to the side so if I need to add more) If you want thicker or thinner soup you will need to adjust the amounts. Then I add the meat, 2 cans of brunswick stew, and the cans of corn. Next I take the cans of potatoes and the cans of green beans and drain the liquid from them. Then I add those to the crock pot. Next I add about 1/2 can of tomato soup and stir it in and I taste it to see if I want to add more. I keep tasting it after adding more tomato soup until I get it the way I want it to taste. Next I just put the crock pot on the warm setting and let it heat up a bit to cook all together. Now it’s done.!
(ps. I used to not drain the corn, but over the years I started draining it now, I also used to not add salt or pepper, but now I add that to taste too)
Also, you can use other veggies, these are just the ones my hubby and kids will eat :)

I like to serve mine with Jiffy CornBread. I think that the sweet taste it has is so YUMMY ;)
