Lemon Meringue Inspired Dessert Recipe

As I promised I would, I have a very YUMMY 4 Ingredient dessert for you today :)

I LOVE Lemon Meringue Pie, it is one of my favorites. And as many of you know I LOVE super easy and FAST recipes :) Well one night the kids were asking if I would make something special for dessert. I went in the kitchen and started looking through the cabinets to see what I had. I had two small boxes of Instant Lemon Pudding and a box of Graham Crackers – so I pulled those out and was like okay I might be able to work with this. I looked in the freezer and had some Cool-whip. I thought I will let that defrost and use it to make a yummy little dessert :)

To make it all I did is, I put some of the graham crackers in a baggie and I let the kids roll over them with a rolling pin.  While they were having fun doing that I made the Lemon Pudding (I just followed the directions on the box as to how much milk to add)I let the pudding set up and once the cool-whip defrosted I mixed the pudding and cool-whip together.  Next I took a baking dish and I put some of the broken up graham crackers the kids fixed in the bottom (I covered the entire bottom of the dish) then I topped it with the pudding / cool-whip mixture – and then on the top I sprinkled a little bit of the broken up graham crackers to make it look pretty :) And that was it. I was thinking when I made this it will probably be yummy, but I NEVER imagined it would have the taste of lemon meringue pie. The kids LOVED it and so did my hubby :)

Box of Graham Crackers (I didn’t use all of them)

Update: We have been making this for years now, we changed it up a bit. We mix the pudding like directions on the package, then we add the thawed cool-whip, before pudding sets us, we mix it together. In a big bowl we put a bunch of crushed up graham crackers and mix in the pudding / cool-whip mixture. We do this instead of layer it. We place it in the fridge for a few hours or so. Then enjoy :)
